Four futuristic farms are already growing businesses

In an Indiana warehouse, crops stacked in layers thrive year round under grow lights without chemicals, energy over-consumption or fear of bad weather. In London, growth is down...in abandoned tunnels under city streets. The hydroponic system reduces water consumption by 70%. Rooftop greenhouses in New York City occupy previously unused space. Renewable energy provides power, water consumption is minimal and yields are 20 to 30 times open field production. Rotterdam will soon see a global first—a floating dairy farm. It will be self-sufficient, growing feed, recycling nutrients, using solar power and collected rain water. In each case, consumers are just steps away.
