This is a machine that cuts exactly the hard cheese in half (like Parmigiano Reggiano), providing results comparable to fresh and manual cutting.

The so called "rock cut", in fact carries out the operation by non-linear blades which intersect and divide the cheese leaving its surface rough, exactly as if it was cut by hand.

The automatic sectioning machine Rock 21 instead is designed to make the horizontal and smooth cut of the cheese automatically.

The cheese is centred accurately both horizontally and vertically by a bell with a variable diameter and to cut particularly small portions, a inox cylinder extracts the central part of the to prevents the breakage of the tips of too thin slices, allowing also to sell the heart of the cheese separately as a delicacy.
